Dry Jerk Seasoning

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 tablespoon onion flakes
1 tablespoon onion powder
2 teaspoons ground thyme
2 teaspoons salt
1 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
2 teaspoons sugar
1 teaspoon coarsely ground black pepper
1 teaspoon cayenne pepper
2 teaspoons dried chives

Mix together all ingredients. Store in a tightly closed glass jar. It will keep its pungency for over a month.

Independence Day Grilled Red Snapper

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 Cup Dry Jerk Seasoning
2 Cups White Wine
2 Tablespoons Oil
3 3 Pound Red Snappers, Gutted, With Heads and Tails Left On

Mix together the Dry Jerk Seasoning, white wine, and oil. Set the fish in a flat dish and pour the jerk and wine mixture over top. Let the fish marinate for about 1 hour in the refrigerator. Meanwhile, prepare a fire in the grill.

Grill over white hot coals for 8 to 10 minutes on each side. Serve hot, with Rice and peas and a tossed salad.

I didn't expect to see this so soon, Billy! Thanks!

Okay, the first two recipes listed interested me at once. I'm able to save you the typing because I found the Broiled Jerk Snapper Fillet on another website, but I cannot locate the Caribbean Salmon Steaks-- would you post that one, please?


Broiled Jerk Snapper Fillet

Yield: 2 servings

Ingredients:

* 1 tablespoon Dry Jerk Seasoning
* Dash hot pepper sauce, preferably Scotch bonnet pepper sauce
* 2 tablespoons oil or margarine
* 10-ounce snapper fillet

Method:
Blend the jerk seasoning, pepper sauce, and oil. Cover the fillet with the mix, being careful to coat the fillet all over. Place in a pan approximately 4 inches from the broiler. Broil until the fish flakes when tested with a fork, which will take just a few minutes. Unless the fillet is very thick, it is not necessary to turn the fish as it cooks.

Serve at once with garlic bread and a green salad.

Here ya go Vicci. I posted the Dry Jerk Seasoning recipe earlier. The recipes are rather simple, but the taste is really good....all except salmon, can't stand the smell

Caribbean Salmon Steaks

Amount Measure Ingredient -- Preparation Method

2 Teaspoons Vegetable Oil for Each Steak
2 Inch Thick Salmon Steaks
Dry Jerk Seasoning -- to taste

Prepare a fire in the grill.

Rub the oil liberally over the salmon steaks. Sprinkle the Dry Jerk Seasoning over the salmon steaks as if it were salt and pepper. Place the seasoned steaks in a well-greased basket over the hot coals. Grill for 5 to 6 minutes on each side, being careful not to overcook. When the fish flakes just slightly, it is done. Remember that it will continue to cook so you may want to take it off the grill when it is slightly underdone. Serve hot.

Thank you both! I didn't want to make Billy type any more than he had to, but those recipes interested me too. I love to grill fish and since we seem to be getting warmer weather finally, will be doing a lot more of it.

You sound like my husband-- he doesn't mind if I grill it outside but always claims that the house "smells" when I cook salmon indoors.
