Fredia and the 800 lb gorilla weren't impressed with this dish [although he ate 2 helpings], but I thought it was great! The sweetness of the parsnips blended well with the richness of the potatoes. The parsnips were large which contributed a little stringyness, but that's what teeth are for. I think it would be even better with younger parsnips.

Me too Maryann, it was quite tasty! Parsnips are definitely going to be part of my diet.
