It's too windy today to BBQ, so I'm having to cook this chicken in the oven. It's all prepped and waiting for the oven. I'll post some pictures later when it comes out of the oven. I used Pop's Creole Seasoning that Lorraine, Jean, and I got when we cooked together in Colorado a couple of years ago. We'll see how it turns out.
That brushing with olive oil before seasoning is a good idea. I'd always left my chickens a little damp so the seasoning had a chance. This works much better.
