We made the Rosemary-Orange Pork Tenderloin with grilled broccolini and goat cheese polenta last night from the Weeknight Grilling Book. Loved it!

The marinade is very simple and it marinates for only 10 minutes before ready to grill. The list of ingredients of short and things we would usually have on hand. I cut the amount of red pepper flakes from 2 teaspoons to a little less than 1.

Broccolini isn't always available in the store here. It must sell out early, but I went early and got some. This is just tossed in olive oil and grilled for 5 minutes. Very good! We'll do this again.

Goat Cheese polenta was very rich and very good. Not for the dieters!

The menu was easy and good. If wishing to cut calories, switch the polenta to something else. But, the plate combination was very nice!

Goat Cheese Polenta

1 1/2 cups chicken broth
1 1/2 cups milk
1/2 teaspoon kosher salt
3/4 cup yellow cornmeal
4 ounces goat cheese -- crumbled
1/4 cup heavy cream

Bring broth, milk, and salt to a boil in a saucepan over high heat.

Reduce heat to medium-low, then gradually whisk in cornmeal.

Cook until thick and bubbly, about 5 minutes, stirring constantly.

Stir in goat cheese and cream.

Grilled Broccolini

2 tablespoons olive oil
salt -- to taste

Toss broccolini with 2 T olive oil and salt.

Grill for 5 minutes, turning often to prevent burning.

Rosemary-Orange Pork Tenderloin

1/2 cup fresh orange juice
1/4 cup olive oil
2 tablespoons fresh rosemary -- chopped
1 tablespoon garlic -- minced
1 tablespoon kosher salt
2 teaspoons red pepper flakes -- less as desired
2 pork tenderloin -- trimmed

Preheat grill to medium-high

Combine orange juice, olive oil, rosemary, garlic and seasonings for the
pork in a measuring cup or bowl.

Pour marinade over tenderloins in a large resealable plastic bag; Marinate
for 10 minutes

Grill tenderloins, flipping and basting with marinade until they reach 145
degrees on an instant read thermometer, 15-20 minutes.

Remove pork from the grill and tent with foil.

Slice tenderloins into 1 1/2" thick pieces ( you should get about 6 slices
per tenderloin).
