During a recent brain fade, a couple of the most recent issues of Cuisine at Home wound up in the recycle bin by mistake. I lost the recipe for chicken with artichokes in a white wine sauce which I'd made once, to cheers, and wanted to do again. It was in either the August or September issue. If anyone can shoot it to me, I'd more than appreciate it.

Welcome Joe!! The 'powers that be' around here have been very slow in posting the magazine recipes in the archives and I'm on the road (away from my stash of C@H), so I can't post the recipe for you. But, someone will be along shortly to help you out!

In the recycle bin??? Hope whomever did that is no longer in your life.... (just kidding )

I did it myself! sorted two piles: recycles and keepers; promptly recycled the keepers and kept the recycles! Guess I had a lot on my mind. Or something.

Chicken and Artichokes

Recipe By :
Serving Size : 4 Preparation Time :0:00
Categories : Main Dish Main Dish Chicken

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
Dressing
1/4 cup olive oil
1/4 cup fresh lemon juice
2 tablespoons honey
2 teaspoons garlic -- minced
1 teaspoon dried thyme
1/2 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
Chicken
2 Tablespoons olive oil
4 chicken breast, no skin, no bone, R-T-C
1 can artichoke hearts -- drained and halved
1 medium lemon -- thinly sliced

Combine ingredients for the dressing.

Season Chicken breasts with salt and pepper. Saute in 2T oil in a large
saute pan coated with non-stick cooking spray. Cook over medium-high heat
until lightly browned on both sides 3-5 minutes per side. Reduce heat to
medium cover and cook 5 minutes.

Add artichokes and dressing. Simmer and reduce about 3 minutes.

Top chicken with slices of lemon, cook 2 minutes or until dressing
thickens

Serve over cooked orzo, cous cous, or brown rice.

Garnish with chopped fresh parsley.

Many thanks. It certainly sounds like the one I'm chasing, close enough to be a first cousin; minor differences, sea versus kosher salt, regular rice versus orzo, etc. I really appreciate your response. With three of a kind age five, it isn't like your sitting around waiting for something to do!

Welcome Joe. Only because I already had it saved in my Master cook - it was a quick cut and paste.

Are you sure you are not thinking of the artichoke chicken with Parmesean Orzo from the weeknights Vol II book??? It has white wine and honey. It was another good one. If it, unfortunately you will have to wait for it, unless someone can get to it first. I am booked up this evening. Pizza and kids. I did do a very quick scan back to the february issue and didn't see any other chicken and artichoke dishes. Maybe you didn't toss the Vol II book???

Artichoke Chicken with Parmesan Orzo

Recipe By :
Serving Size : 4 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
Dust with; Saute in 2 T. Olive Oil
4 boned and skinned chicken breast halves
1/4 cup all-purpose flour
Salt and pepper

Add; Whisk Together:
1 box frozen artichoke hearts -- Thawed and halved
1 cup dry white wine
1/4 cup honey
2 tablespoons white wine vinegar

Finish with; Stir in:
2 tablespoons unsalted butter
1/4 cup fresh parsley -- chopped
salt and pepper -- to taste

Parmesan Orzo - cook; stir in:
1 cup orzo
1/2 cup heavy cream
1/4 cup parmesan -- grated
salt and pepper

Dust seasoned chicken breasts with flour. Saute in oil in a large
nonstick skillet over medium-high heat until brown, about 3 minutes per
side.

Add artichokes and saute 2 minutes or until edges are lightly golden.

Whisk wine, honey, and vinegar together, then pour over chicken . Simmer
3 minutes to reduce slightly.

Finish with butter, then stir in parsley. Season before serving



For the Orzo:

Bring a pot of salted water to a boil for the orzo. Cook pasta according
to package directions; drain.

Return pasta to pot and stir in cream and Parmesan. Cook until thick,
about 1 minutes, then season with salt.
