Ok y'all! The next time I visit someone they can teach me about kneading dough. I'm not very good at judging doughs.. like when they're too sticky or dry. So, more lessons to come.

Billy, I use my KitchenAid with the dough hooks. Very easy. Most doughs, 5-7 minutes. It should clear the bowl, once all the flour is incorporated. I usually let it rise right in the same bowl, then take it out and put it on a floured board. Usually all it needs is a light dusting of flour to work with it after that.

The new baking cookbook ought to teach me if I get up the guts to follow the recipe exactly. It's got some nice breads, including a popcorn bread recipe.
