Hi all,
A few years back in Cusine there was a recipe for a pork loin with fennel and a tomato gravy I cannot for the life of me find this recipe. I would like to make it for a dinner party this weekend. Does anyone remember it and could you psot the recipe for me.

The only thing I see with pork AND fennel is the Pork Provençal from Issue No. 27 (June 2001), pages 6-9. I don't have this issue, but hopefully, someone will be along soon to post the recipe for you.

Welcome back Nanci! So sorry I have only been around a bit over a year and this recipe does not sound familiar to me. I am also in the process of moving and do not have my past issues with me. Best of luck to you!

Pork Provencal, Fennel in Foil, Tomato Butter Sauce

Pork
1 2lb pork loin (center cut)
salt & pepper to taste
1/4 C honey
2 t herbs de provence
Grill indirectly (or roast at 350), basting with honey & herb mixture until internal temp of pork goes to 145 and let it rest 15 min.

Fennel in foil
combine and wrap in foil--
2 fennel bulbs (large dice)
2 C red onions cut into wedges
1/4 C extra virgin olive oil
1 T lemon juice
2 t lemon zest
1 t garlic minced
1 t kosher salt
1/2 t black pepper
Seal the foil and grill until the vegis are tender.

Tomato-Butter Sauce
2 C tomatoes, seeded and diced
1/2 C unsalted butter--bring to a simmer with tomatoes
Add 1 T fresh parsley, snipped
1 T fresh tarragon, snipped
1/2 t kosher salt
simmer 5-8 min--put in food processor and process until smoth

Slice pork and serve over the tomato sauce, cover with the vegi mixture.

HO...I need to copy this! This sounds really good! And a member recommends it...MUST TRY! Copied and saved myself. Fennel is new in my area and therefore, at my house. We've liked it so far...why not! I've got a pork loin roast in the freezer....
