I remember making that seven layer salad in the 80's and everyone loved it! I used to assemble it in a 9x13 baking dish, cover it tightly, and the next day, it was easy to cut into squares. Trixxee is right, surprisingly it stayed crisp.
Also used to make taco salad a lot. The version I used was given to me by a friend. Basically, you brown ground beef, then drain on paper towels to blot up excess oil, then put in a bowl and chill. Make a salad with any kind of lettuce, but make sure you use at least some iceberg for crunch. Slice pepper rings, thin onion slices, small chunks of tomato and black olives. When you are ready to serve, put the ground meat on the salad, top with your choice of cheddar or jack cheese, and drizzle with a good amount of catalina dressing. Toss and serve immediately.
Can't think of anything else off the top of my head that screams 80's, but since my girls were growing up during that time, I'll ask them if they remember something that really stands out.
