This recipe is from the book I am working from this month called, "Quick & Easy Vietnamese Home Cooking for Everyone" by Andre Nguyen and Yukiko Moriyama.

I used some kind of Vietnamese white fish, (sorry, can't remember the name) and followed this easy to make recipe, except for the 1 T. of syrup that is called for at the end; I forgot that! Well, it didn't matter, we gave this dish a 10! It just melts in your mouth and is so tasty! I didn't have a clay pot, (I broke the one and only that I had) so I just did the whole thing in a frying pan, then put a lid on for the simmer.

Mom's Fish in a Clay Pot

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
18 ounces fish fillet with skin, such as catfish, red snapper, cod or halibut
4 green onions -- cut into 1 1/2" lengths
1/2 ounce ginger -- sliced
4 cloves garlic -- crushed
1/4 cup fish sauce
1/4 cup sugar
2 teaspoons chili flakes
dash of pepper
1 tablespoon store-bought syrup
1 Tablespoon oil for stir frying

Cut fish fillet into serving size. Heat oil in a pan and fry garlic and ginger. Add green onion.

Add fish pieces and brown on both sides.

Add fish sauce, sugar, chili flakes and pepper.

Transfer to a clay pot. Add Syrup and simmer covered for 15-20 minutes.

P.S. I forgot to add that we also had steamed jasmine rice, Sharon's cucumber salad, and spring rolls. Then, as if we needed more...I made Laura's butterscotch pie for dessert! Fantastic!

Sorry, I'm not sure. It was hard to read the label but it was Vietnamese something...so good, it just melts in your mouth. Please try this recipe, Sharon, and make your cucumber salad to go with it. It was perfect!

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 English Cucumber -- thinly sliced
1/2 sweet onion -- thinly sliced
1/4 cup sugar
1/4 cup unseasoned rice wine vinegar
2 teaspoons chopped ginger
1/2 teaspoon crushed red pepper
2 teaspoons fresh mint -- finely chopped

Mix vinegar and sugar together until sugar is dissolved. Add remaining ingredients, stir and chill.

Darn, seems like these good ones always come up when I'm on the road and then I have to try and find them...I need a system...or a secretary!

Thanks Maryann, it sounds right up our alley! The Thrift store had a clay pot, and I debated about buying it. May have to go back and get it!

That recipe is actually from one of those "teaser" C@H magazines and it is Jennifer's absolute favorite salad. I have wonderful mint that Renae brought me. Adding cucumber to the grocery list for today.
