Take a look at this!

It's from THIS ENTRY on Francis Mallmann's Facebook page.

His caption says (translated), "It's a type of Chilean tomato soup [actually, more of a stew] with bread, basil, onions and some eggs that's brazen and cheerful. It's a tribute to the Casa Rosada" [literally "Pink House" - Argentina's presidential residence akin to the White House in America].

Unfortunately, Mallmann hasn't posted his recipe for it (yet) and, although there is a recipe for it listed in the index of his book, Seven Fires ("Siete Fuegos"), I don't have the book, so I did a lot of Googling around for it.

Many of the recipes I found used the eggs scrambled, instead of how beautifully poached they are in the above photo. None of them mentioned basil, some included meat and many included corn kernels.

Of the recipes that poached the eggs, the following one looked the best:

Tomaticán

Ingredients:
  • 2 Tbsp. Vegetable oil
  • 4 large tomatoes, peeled and diced
  • 1 Onion, chopped
  • 1 Green onion, chopped
  • 1 Tbsp. Breadcrumbs
  • Salt, pepper and paprika to taste
  • 2 Slices Homemade bread, soaked in water
  • 4 Eggs
  • 4 Slices Homemade bread, toasted and spread with olive oil (optional)
Instructions:
  1. Heat a sauté pan then add and heat the oil.
  2. Sauté the onions and green onions until the onion is translucent.
  3. Add the tomatoes.
  4. Mix and cook for 10 minutes.
  5. Incorporate the breadcrumbs and season with salt, pepper and paprika.
  6. Add the soaked bread and mix again.
  7. Dig four hollows in the mixture and crack an egg into each one.
  8. Cover the pan so that everything is cooked with steam (or beat eggs, add them and cook another few minutes).
  9. Distribute the Tomaticán on toasted homemade bread spread with olive oil or serve alone.
This is definitely going onto my to-do list, but I'm going to wait a while to see if Mallmann posts his recipe. In the mean time, while searching for this, I discovered another interesting-looking soup (from Paraguay) that I'll try. More about that one later.
