How about slapping on the griddle with a little butter and add to a ham/gruyere(or gorgonzola) sandwich or pizza???
Or, this one that I'm going to do a version of for one of the books -
Caramelized Pear Crostini
1 pear -- skinned, sliced into 1/4 inch thick slices
6 oz Goat Cheese
1/3 cup Chopped Chives
3 tbsp Brown Sugar
2 tbsp Butter
1 tsp Cayenne Pepper
4 slices prosciutto -- (4 to 6)
6 crostini pieces -- whole wheat recommended (6 to 8)
Combine goat cheese and chives in a bowl and set aside.
In a non-stick pan on medium heat, add the butter and brown sugar and stir until melted. Add the sliced pears to the pan and coat in butter and sugar mixture. Add the cayenne pepper to the fruit once fully coated.
Simmer on medium heat until one side of the pear starts to brown, then remove from heat. Take the goat cheese mixture and liberally coat each crostini piece.
Lay the caramelized pears on top of the goat cheese, usually about 1-2 for each piece. Top this with a slice of prosciutto and drizzle remaining sauce from pan on top.
Serves 2-3
