Thought of him when I saw this - is he eating any cheese at all?? With only 2 oz. of cheese on tbis, I thought maybe he could give it a try??

Mushroom Pizza

1 quantity Cornmeal Pizza Dough (see recipe)
2 Tbs olive oil
8 oz assorted mushrooms: cepes, oyster mushrooms, shiitake mushrooms, straw mushrooms, cultivated mushrooms, etc., sliced if large
1/4 cup purchased basil pesto
1/2 cup grated mozzarella cheese
Basil leaves, for garnish

1. Preheat oven to 450 degrees F.

2. On a floured surface, press out the pizza dough using your fingertips into an 11 inch circle (always pressing from the inside of the dough to the outside).

3. Heat the olive oil over medium heat.

4. Add all of the mushrooms and saute until almost tender.

5. Place the pizza dough on the heated brick, tile or baking sheet.

6. Spoon the pesto over the surface and then top with mushrooms.

7. Sprinkle with the mozzarella.

8. Bake for 15 minutes, or until the pizza is golden on the edges and crisp underneath. Serve sprinkled with the basil leaves.

Unfortunately, he is not a big mushroom fan. Thanks for thinking of him, though. Do you have a cornmeal crust in Pizza, Pizza, Pizza? I would be interested in that.
