Guess who's Costco had pork bellies on sale?! I am so excited! I bought 2. Now the fun begins

OMG! Dare I ask how much a lb? I've got a 15lb belly in the freezer - enough for 10lbs of bacon a 5lbs to braise. I just saw a place that confits pork belly in bacon fat . . . then dredges slabs (slices) in rice flour and deep fries it.

I was going to post a few ideas, but I have so many dishes/appetizers that I wouldn't know where to start!!
