I added the pineapple rice side that goes with this, a must!
Coconut-marinated chicken kebabs
Use a spoon to scrape out the jalapeños’ seeds and pith — much of their spicy
heat is contained in them. Wear gloves to protect your hands.
Makes 4 kebabs
Total time: 45 minutes
11/4 lb. boneless, skinless chicken
breast halves
1/2 lb. fresh pineapple
1 large green bell pepper
1 can coconut milk (14 oz.)
1/2 cup sugar
2 jalapeños, seeded and diced
1 tsp. kosher salt
Juice of 1 lime
Preheat grill to medium-high.
Prepare chicken, pineapple,
and bell pepper, cutting each
into 2-inch chunks (you’ll need
12 pieces of chicken and 8 pieces
each of pineapple and bell pepper).
Place chunks in a large resealable
plastic bag.
Combine coconut milk, sugar,
jalapeños, salt, and lime juice for
the marinade in a glass measuring
cup with a pour spout. Add half the
marinade to the bag and let stand
for 15 minutes; reserve remaining
marinade for basting the kebabs.
Alternately thread 3 pieces
of chicken and 2 pieces each of
pineapple and bell pepper onto
2 soaked wooden skewers as
shown, right, starting and ending
with chunks of chicken. Repeat
with remaining chicken, pineapple,
and bell pepper to make 4 kebabs.
Grill kebabs, covered, until chicken
is cooked through, 8–10 minutes
per side, basting with reserved
marinade every 3 minutes.

Pineapple rice
The fruity flavor of the rice combined
with the flavor of coconut chicken is
like a bite of a piña colada.
Makes 4 servings (3 cups)
Total time: 25 minutes
1 cup water
1 can pineapple juice (6 oz.)
2 tsp. sugar
1 tsp. unsalted butter
1/2 tsp. kosher salt
1/2 tsp. red pepper flakes
1 cup dry basmati or
jasmine rice
Juice of 1/2 a lime
Chopped fresh cilantro
Bring water, pineapple juice, sugar,
butter, salt, and pepper flakes to
a boil in a saucepan. Stir in rice,
cover, reduce heat to low, and
simmer 15 minutes. Remove pan
from heat, let sit 5 minutes, then
fluff rice with a fork.
Stir in lime juice and cilantro.
