Here ya go PJ, you can increase or decrease the cayenne in the Dry Jerk Seasoning as your taste dictates. It doesn't seem to be much mayo for that much cabbage, but it is plenty. Hope you like this, I know my family does.

Jamaican Cole Slaw

Amount Measure Ingredient -- Preparation Method

4 cups shredded cabbage
3/4 cup shredded carrots
1/2 cup chopped nuts -- optional
1/2 cup mayonnaise
2 tablespoons sugar
1 tablespoon cider vinegar
2 tablespoons Dry Jerk Seasoning
Dry Jerk Seasoning

Combine the cabbage, carrots, and nuts in a large bowl; set aside. Mix together the mayonnaise, sugar, vinegar, and seasoning. Spoon over cabbage mixture. Toss well. Cover and chill before serving.

Dry Jerk Seasoning

Amount Measure Ingredient -- Preparation Method

1 tablespoon onion flakes
1 tablespoon onion powder
2 teaspoons ground thyme
2 teaspoons salt
1 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
2 teaspoons sugar
1 teaspoon coarsely ground black pepper
1 teaspoon cayenne pepper
2 teaspoons dried chives

Mix together all ingredients. Store in a tightly closed glass jar. It will keep its pungency for over a month.

Keep in mind what I said about the cayenne. Some brands are hotter than others and age also has an affect on it. You can burn your po' liddl lips

Billy, any interesting fish recipes? Two criteria: grilled and easy last-minute prep for company. You can take your time with this, I don't plan on entertaining until after Easter.
