Great easy Spring meal

I made this again the other night. It is one of my favorite light spring dinners. I usually serve with brown rice and fresh asparagus. Great and Easy. From C@H issue 38

Chicken and Artichokes

Amount Measure Ingredient -- Preparation Method

Dressing
1/4 cup olive oil
1/4 cup fresh lemon juice
2 tablespoons honey
2 teaspoons garlic -- minced
1 teaspoon dried thyme
1/2 teaspoon kosher salt
1/2 teaspoon crushed red pepper flakes
Chicken
2 Tablespoons olive oil
4 chicken breast, no skin, no bone, R-T-C
1 can artichoke hearts -- drained and halved
1 medium lemon -- thinly sliced

Combine ingredients for the dressing.

Season Chicken breasts with salt and pepper. Saute in 2T oil in a large
saute pan coated with non-stick cooking spray. Cook over medium-high heat
until lightly browned on both sides 3-5 minutes per side. Reduce heat to
medium cover and cook 5 minutes.

Add artichokes and dressing. Simmer and reduce about 3 minutes.

Top chicken with slices of lemon, cook 2 minutes or until dressing
thickens

Serve over cooked orzo, cous cous, or brown rice.

Garnish with chopped fresh parsley.

That is a lovely spring meal----fresh artichokes are even better!!! I have made this a couple of times and is always superb!!!
