Here is my very simple recipe that I use for my banana cake :

FROSTING:
1 stick butter, softened
8 oz package cream cheese, softened
1 box powdered sugar
1 tsp vanilla extract

To prepare frosting: Cream together butter and cream cheese. Add sugar and vanilla and continue beating until of spreading consistency. Frost when cake has completely cooled.

My recipe is identical to yours, except it calls for 2 teaspoons of vanilla instead of one.

I think the key to good banana cake, bars, bread... is to use VERY ripe bananas with completely blackened skins.

Best Frosting Ever

1 cup shortening
1 pound of powdered sugar
2 Tablespoons of Dream Whip (dry)

Beat this until creamy, then add:

1 1/2 teaspoons of Light corn syrup
1 teaspoon vanilla
1/4 cup water

Here ya go SwissMiss, this is from one of my friend's Grandma. It is excellent. The recipe calls for frosting the cake, but I never have. It is so moist and tasty it rarely lasts long enough to cool, much less frost:

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/2 cup shortening..(can be liquid oil or bu
1 1/2 cups sugar
2 large eggs
1 cup mashed bananas
4 tablespoons sour milk (I use 3 T milk and 1 T vinegar
1 teaspoon soda
1 teaspoon baking powder
2 cups flour
1 pinch salt
1 cup nuts (optional)

Preheat oven to 350F.

Mix all together..Bake in a lightly greased rectangular cake pan (I usually use a pyrex lasagna pan) for about 30 minutes or use the ole' toothpick method.

I frost it with a cream/butter/powdered sugar conglomerate!

NOTES : This recipe is sooooooooooo good, that if you haven't made it you are depriving yourself and your family. I don't even frost it, there is no need. A BIG thank you to SugarBrown for posting it
