Made two of these today because the kids were all coming over and I wanted to be sure there was enough. Jenni, this was a big hit with everyone, and your olive oil crust was a cinch to make even for me, the person who can't make a good pie crust. Very tasty!

I wasn't even thinking of making it because any pie crust I've made was a disaster, but if you say it was easy, I'll give it a try too.

I thought it was very easy, Billy. The directions said to mix the ingredients and to press into a pie plate. So, that's exactly what I did, only mixing long enough to form a ball, then dumped it in the pie plate and pressed it out quickly, trying not to mess with it too much. I didn't worry about how it looked because it hardly shows anyway.
It's a tasty crust for a savory dish.
