For the cutlets we mixed about 1 cup of unbleached flour, 1 1/2 Tbs grated Parmesan cheese, 2 tsp lemon zest and 1 tsp Mrs. Dash Garlic & Herb seasoning. Then when it was done we sprinkled the top with more Parmesan and put it under the broiler until melted.
