This is the dressing Billy had on his salad at Vesta's - it was wonderful!
VESTA’S ROASTED RED PEPPER DRESSING
7/12/07, Morris Fenton/Scottie
1 C apple juice
1 C cider vinegar
4 T red wine
1/2 C onion small dice
4 T minced garlic
2 ea red peppers roasted and peeled
2 T whole grain mustard
1 tsp ground mustard
1/2 tsp lemon thyme leaves
1 t oregano
1 t smoked paprika
1/4 tsp cayenne
No instructions with the ingredient list from Morris, so what I'd do is blend all ingred. except the garlic and red peppers - mince them up and add to dressing.
Or, maybe better yet - add all ingred. in a blender/processor except one bell and mix all together and add the one pepper minced finely.
I'm sure we'll all play with this one....
