This is the dressing Billy had on his salad at Vesta's - it was wonderful!


VESTA’S ROASTED RED PEPPER DRESSING
7/12/07, Morris Fenton/Scottie

1 C apple juice
1 C cider vinegar
4 T red wine
1/2 C onion small dice
4 T minced garlic
2 ea red peppers roasted and peeled
2 T whole grain mustard
1 tsp ground mustard
1/2 tsp lemon thyme leaves
1 t oregano
1 t smoked paprika
1/4 tsp cayenne

No instructions with the ingredient list from Morris, so what I'd do is blend all ingred. except the garlic and red peppers - mince them up and add to dressing.

Or, maybe better yet - add all ingred. in a blender/processor except one bell and mix all together and add the one pepper minced finely.

I'm sure we'll all play with this one....

Here's our development recipes :

Pork Shoulder 6 - 7 #
Brown Sugar 1/2 C
BBQ Pork spice mixture 1/2 C

Notes for this one :

Remove the external fat from the pork.
Rub the marinade mizture all over the pork and refrigerate for 8-10 hours.

Brown the pork on all sides in some oil.
Smoke for 1 1/4 hours per # at 265º using 50/50 hickory/oak. In the meantime, prepare the BBQ
sauce.

Continue to cook in a 250 º oven for ? hours.


Test batch - unsmoked, 8 hours oven cooking was very tender.
6.66# shoulder picnic roast at $1.79/# yield 2# usable meat, 300 ml braising liquid.

And then there's the spice mixture :

Cumin 2
Garlic Powder 2
Black Pepper, Ground 1
Kosher Salt 1
Thyme, dry 1
Rosemary, dry 1/2 lightly ground

Spin the rosemary in the spice grinder for about 10 seconds.
Combine all ingredients in the ratio shown.

And then you need some reheating liquid :

Water 1 1/2 C hot
Cider Vinegar 1 C
Brown Sugar 2 T
Paprika 1 T
Cayenne 1 t
Black Pepper 1 t
Kosher Salt 2 t

FINISHED LIQUID

Mixture above 1 part
Braising Liquid 1 part
Water 1 part

Dissolve the brown sugar in the water. Mix in the remaining ingredients.

And a sauce:

Apple Cider Vinegar 1/2 C
Brown Sugar 1/2 C
Molasses, Dark 1/2 C
Worcestershire Sauce 1/4 C
Mustard, Whole Grain 1/4 C
Honey 1/4 C
Tabasco 1 t
Kosher Salt 1 T
Black Pepper, Ground 1 t


And then there's baby Kaiser buns and spiced apple chutney and prep cooks that can't follow recipes, line cooks that can't cook and all the other unknowns that combine to produce a one of a kind sandwich you had never to be repeated again kinda experience.

If anyone knows why the hell I went to this much trouble to make an $8 sandwich for lunch, please do let me know. Five minutes to eat and three days to mise en place. Nuts.

Welcome indeed Scottsta! I have a feeling I personally wont be tackling your recipe, would rather zip over your way and try it at your place. I love dedication and you sure demonstrate that for the $8 sammie. lol
And I know they taste just wonderful. Couldn't be anything else. I will turn up someday, prepare thyself.

Wow! That sounds wonderful and quite the ordeal.

I found a pulled pork recipe that is always a hit and quite a bit simpler for home cooking. The original recipe calls for pinapple salsa, which we didn't care for.

Pulled Pork Rub

Recipe By :
Serving Size : 8 Preparation Time :0:00
Categories :

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
5 pounds pork roast -- shoulder cut
1 Tablespoon vinegar
1 Tablespoon Black Pepper
1 Tablespoon minced garlic -- (3-4 cloves)
2 Tablespoons oregano -- fresh, or 1 teaspoon dried
1 bay leaf -- finely crumbled
1 teaspoon ground cumin
1 Tablespoon olive oil

Trim of visible fat from roast. Make shallow slits
on the surface of the pork with the tip of a sharp
knife.

Pour about 1 Tablespoon of vinegar in the
palm of your hand and rub it all over the pork.
Use more vinegar if necessary.

Make rub with the remaining ingredients by combining ingredients in
a small bowl to form a paste. A food processor
makes the task easier. Smear the rub all over pork.

Wrap tightly in 2 to 3 layers of heavy duty foil
or plastic wrap. Bake in 200 degree oven for 18
to 24 hours.

Remove foil, bones and visible fat.
Pork will fall apart and shred when pulled with a
fork. Mix meat in its own juices.

Good on ya Jean! I dont have time nor inclination for 3 days of mise for a pork sammie. Rather fly myself to Oregon and try Scotties first hand!! lolol I have however, taken note of his flavours and they sure will be used with some pork prep in the very near future.
