This just looked so good and a nice summer meal - so thought I would share it. I have not tried it. It is out of the new weeknight menus vol. 2
Salmon Salad BLT

Stir Together; Fold In:
3/4 cup mayonnaise
1/2 cup english cucumber -- seeded and diced
1/4 cup plain yogurt
2 tablespoons shallots -- minced
2 tablespoons fresh dill -- chopped
1 tablespoon fresh lemon juice
1 1/4 pounds salmon -- cooked and chopped
salt and pepper
Toast; Assemble Sandwiches with:
8 slices thick-sliced white bred, buttered on one
side
romaine lettuce leaves
Sliced tomato
Prepared salmon Salad
8 slices thick-sliced bacon -- cooked
Saute salmon in oil in a nonstick skillet over medium-high heat for 4-5
minutes per side. Cool slightly.
Stir mayonnaise, cucumber, yogurt, shallots, dill and lemon juice together
in a bowl. .
Chop salmon, then fold into mayonaise mixture, season with salt and
pepper. (may be made and chilled up to 2 hours ahead)
Toast bread buttered side down on a griddle or in a non-stick skillet over
medium heat until golden, 2-3 minutes. (By leaving one side untoasted ,
the bread won't get too crunchy).
To assemble sandwiches, layer lettuce on the untoasted side of 1 slice of
bread, then top with a slice of tomato, 3/4 cup salmon salad, and 2 strips
of bacon. Top with another slice of toast and serve.
