Great Summer Soup
For the soup--
6 C Chicken broth
2 T minced fresh cilantro
1 T minced fresh oregano
1 t apple cider vinegar
1/2 t ground cumin
1-2 T fresh lime juice, key lime if available
Mix broth and next four ingredients in a sauce pan, bring to a boil, reduce heat and simmer 15 min. Season with salt & pepper and add lime juice. Can store in fridge--re heat before serving.
Tortilla Strips
1 C olive oil
2 6 inch tortilla strips, cut into strips
Heat oil in med skillet over medium heat and fry strips until golden, about 2 min. Drain.
Chicken
Cut a cooked (I prefer grilled) chicken breast into thin slices.
Chop equal amnts (half cups) of tomato, green bell peppers, and white onion finley.
Cut an avocado into small chunks.
Slice a lime into six slices.
Re warm the soup, ladle into bowls over lime slices. Mound chicken in the middle and cover with the vegis and avocado. Sprinkle tortilla strips over top. (Adapted from a Bon Appetit recipe)
