I don't know if anyone here is a fan of Rachael Ray. I like her and have tried a few of her recipes. So, I decided to give another recipe a try last night. I loved it, but the kids did not. My DH is on the road right now, so he didn't try it. Anyway, here goes:
Lemon Basil Bowties
Bowtie pasta - cooked al dente
1/4 c EVOO
1/2 c fresh basil, chopped
3/4 c toasted pine nuts
1 1/2 c ricotta cheese
grated lemon peel of 2 lemons
salt and pepper to taste
Cook pasta according to directions. Drain and toss with EVOO. Add pine nuts, basil and lemon zest. Stir in Ricotta cheese and serve.
Yummy!
