Anyone have any favorite spinach salad recipes to share? I used to have one that had a sort of red dressing (maybe tomato paste in it) that was tangy and then bacon bits, boiled egg chopped, mushrooms and maybe water chestnuts, but now cannot find the recipe. Also anything else would be appreciated too. Thanks!

Carol, this is the salad that got me started on the Port reduction I've been making for a few years now. We love this salad -

SPINACH SALAD WITH BLUE CHEESE, SPICED WALNUTS, PEARS & PORT VINAIGRETTE

Recipe By :a Chef's Journey
Serving Size : 4

WALNUTS:
1 1/2 lbs walnuts or pecans
1 1/2 C water
2 c granulated sugar
Couple (or 3 or 4) shakes Tabasco or cayenne pepper
SALAD:
1 750-ml bottle ruby Port
1/2 c sugar
5 whole cloves
3 whole allspice
2 cinnamon sticks, broken in half
2 firm but ripe Anjou pears, peeled

2 T. chopped shallots
1 clove garlic, minced
1/4 c Champagne Vinegar
1 Tbsp Dijon mustard
3/4 c olive oil
----------
4 ozs Maytag blue cheese, crumbled (~1 cup) Feta is good with this salad also.
2 (5 oz. each) pkgs. baby spinach leaves or mix 1/2 & 1/2 with a spring mix or whatever salad greens preferred

FOR THE WALNUTS:
Bring water & sugar to a boil to dissolve sugar
Add nuts & stir or let sit 1-2 min. & put on a sheet pan which has been sprayed with cooking spray. (Use a sheet large enough for just one layer of nuts)
Bake at 350° for 10-15 min, stirring every 5 min., being careful not to burn. (Bake just till dry)

FOR THE SALAD:
Bring Port, sugar, cloves, allspice and cinnamon to boil in heavy small saucepan, stirring till sugar dissolves.
Reduce heat to med. low. Add pears; cover & simmer till tender when pierced with knife, turning pears every 5 min., ~20 min.
Remove pan from heat. Let cool uncovered 20 min., turning pears once.
Refrigerate pan uncovered till pears are chilled, turning every 1/2 hour, about 1 1/2 hours.
(can be made 1 day ahead. Cover and keep refrigerated.)

Remove pears from the poaching liquid; reserve liquid. Cut pears lengthwise into halves and core.
Cut lengthwise in 1/4" slices; set aside.

Boil 1/2 cup pear poaching liquid, shallots, & garlic in small saucepan over med. high heat till reduced to 1/4 cup, ~3 min.
Transfer mixture to a medium bowl & cool to room temp.
Whisk in vinegar & mustard. Gradually whisk in olive oil Season dressing to taste w/salt & pepper.

Arrange pear slices around edges of 4 plates. Sprinkle crumbled cheese between pear slices.
Toss spinach and 1/2 cup dressing in large bowl to coat; mound in center of plates. Top with spiced nuts.
Serve, passing remaining dressing separately.

Alternative plating for a crowd: Mound dressed greens on salad plate, fan the pear slices over greens, sprinkle w/crumbled cheese and nuts.

This is what I do with the rest of the sauce -
REDUCED PORT SAUCE:

Bring the remaining poaching liquid to a boil in a med. sized saucepan over med. heat. Let reduce by 1/2 or 1/3 - stay close, once the reduction starts, it goes quickly. When it has reduced to the amount you want, remove from heat and let cool. This sauce is wonderful drizzled over the above salad, ice cream, fruit or cheese platters, just experiment with it and be sure to let me know new ideas!!!

This sauce will thicken up as it cools, so it may take a couple times to get the correct hot consistency. Good Luck!

Jean, have you ever posted this before? I'm sure I've made this or something similar, but I think I got it here. It was very good. Good idea about leftover sauce!

I very well could have posted this before - it's a take off on an old Bon Appetit (or Gourmet) recipe. Have you done the reduction?

Pan-seared Scallop Salad

Amount Measure Ingredient -- Preparation Method

Sauté -- Remove:
4 slices thick-cut bacon diced
Sear:
12 sea scallops -- patted dry
Sauté:
1 cup red onion -- thinly sliced
1 cup red bell pepper -- chopped
Add and simmer:
1/2 cup cherry tomatoes -- halved
1/4 cup cider vinegar
2 T. brown sugar
Stir in:
Seared scallops
Reserved bacon pieces
2 T. chopped fresh parsley
Salt & pepper to taste
6 cups fresh spinach
angel hair pasta -- optional

Sauté bacon in a large pan till crisp.
Remove bacon to a plate, drain, reserving the drippings (this will get Bill’s attention!)
Add 1 T. of drippings back to the pan and increase the heat to high.

Sear the scallops 2-3 min. on each side till golden.
(have the pan really hot so the scallops sizzle when they hit the surface. THEN, leave them for about 2 min. before turning – DO NOT MOVE THEM AROUND)
Remove to a plate.
Add another 1 T. of dripping to the pan, reduce heat to medium.

Sauté onion and pepper till soft, about 5 min.
Add tomatoes, vinegar, and brown sugar. Simmer 3-4 min.

Stir in reserved scallops and bacon.
Finish by adding the parsley and seasonings.

Serve dressing and scallops over fresh spinach. Add angel hair pasta, if desired.

Amount Measure Ingredient -- Preparation Method

1 cup canola oil
3 tablespoons sugar
1/3 cup catsup
1/4 cup red wine vinegar
1 tablespoon worcestershire sauce
1 small onion -- chopped fine
salt -- to taste
6 bacon slices -- cooked and crumbled
3 egg, hard-boiled -- chopped
16 ounces fresh spinach
1 cup fresh mushroom -- sliced

Combine first seven ingredients to make dressing.

Put spinach and mushrooms in a large bowl. Just before serving, add
dressing and toss to coat spinach. Put in individual bowls and top with
chopped eggs and bacon.

1/4 cup sugar
1 1/2 teaspoons minced onion
1/4 teaspoon paprika
1/4 cup cider vinegar
1 tablespoon poppy seeds
1/2 teaspoon Worcestershire sauce
1/2 cup canola oil
1 1/2 cups fresh spinach
1/2 cup strawberries, sliced

Mix first 7 ingredients for salad dressing in blender. Yields one cup of
dressing.

Divide spinach and strawberries between two salad bowls. Top with 1
tablespoon of Poppy Seed Dressing

My neighbor handed off a huge bag of spinach to me before she left on vacation yesterday, so tonight I'm trying out a new recipe: Grilled Portobello and Spinach Salad with Caramelized Onion Vinaigrette. I'll report back with the recipe if it's a keeper!
