Banana Fritters
1 cup sifted all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
2 eggs
1/2 cup milk
2 tablespoons vegetable oil
6 medium firm, ripe bananas
Oil -- for frying
Confectioners' sugar
Into a small bowl sift flour, sugar, baking powder and salt. In another small bowl, beat eggs, milk and oil together with a rotary beater or whisk. Combine liquid ingredients with dry ingredients; stir until all flour is moistened.
Slice bananas in half lengthwise; dip into batter using fingers. Drain any excess butter. Drop bananas into at least 2 inches hot oil (375ยบ degrees F. on deep frying thermometer) in a deep skillet or deep-fat fryer. Fry a few at a time, turning once, 2 to 3 minutes or until golden brown. Drain on paper towels. Serve immediately, sprinkled with confectioners' sugar.
Yields - 6 to 8 servings.
