Dragon fruit has been out around here for about a year now, and recipes for it have been scarce until lately. Here is one we love!

How to Prepare Fresh Pitaya Fruit to Eat: Like a papaya fruit, dragon fruit when properly ripe is quite soft, so you'll find a good way how to eat dragon fruit is just as you would a papaya. Prepare your dragon fruit to eat fresh by just cutting the fruit in half and spooning out the flesh. In fact, eating dragon fruit this way is even easier (and cleaner) than eating papaya like this, because unlike with the papaya, with dragon fruit you have no messy entrails to remove before eating the fresh dragon fruit. The answer about how to eat dragon fruit with all the seeds is that the dragon fruit seeds are completely edible, and you should not try to remove them before you eat the dragon fruit flesh. In fact, some of the nutritional benefits of dragon fruit are in the dragon fruit seeds. This is the same for all the dragon fruit varietes, from the red dragon fruit to the yellow skinned dragon fruit.

Slicing up Dragon Fruit for Company: Another way to eat dragon fruit fresh (an a little more friendly if you have company over who don't want to get sloppy with the spoons) is to slice the fruit with the dragon fruit skin intact. Don't try to remove the skin (you can if you would like, but it takes something away from the presentation), unless you skin is a bit worn out. If you slice the dragon fruit across the long axis in thin slices, you make eating the dragon fruit flesh easy for you and your guests, and you also have a very nice dragon fruit presentation contrasting the flesh of the dragon fruit with the color of the skin. The red dragon fruit with white flesh really stands out this way.
