This is an excerpt from my mystery dinner, so forgive the inconsistencies. I was also to have pics but hubby took the camera to work and LEFT it! Here goes:
The Chicken Bistro Cakes were pretty good. I’d rate them a 6. I found them a tad dry. Personally, I think I should have shaved some parm over the cakes and tomato concasse, but it was late, and I was lucky to get dinner at all…LOL! I think the mix needs a little moisture, maybe another egg or a tad of milk or cream added to the egg mixture before adding it to the dry ingredients. I will say, they were extremely easy to make and I plan to work on this one to make it a “go to” dinner for chicken leftovers. DH is looking forward to having them with a little tomato mayo in a sandwich for lunch tomorrow.
The Tomato Concasse was very good, but I would personally add a tad less red pepper flakes. Just a bit spicy, even for DH. But this added a lot to the cakes and helped pull the meal together. I’d give this an 9.
