Cornstarch Noodles?

I found these in the Asian Market and they look alot like the stuff that was in our Hearts of Palms salad we loved in Mexico. The directions said to soak for 3-5 minutes, so I soaked them in rice vinegear, some of the artichoke marinade and a bit of sugar. Served over lettuce, roasted red pepper and marinated artchoke hearts. James said it was very similiar. What do you all know about them???
