This one is especially for Erin on Gymnastic nights!! Roy loved (3 helpings ) and I liked it very much also. He'll have some of it this a.m. with a fried egg on it, I'm sure.
Easy Ham & Potato Hash
32 oz. pkg. frozen hash brown potatoes, partially thawed (I used ~2 lbs. fresh potatoes*)
3/4 cup each – green and red bell pepper
3 cups cooked ham
8 oz. pkg. cream cheese, softened
1 1/2 cups milk (I used mostly canned milk)
2 1/2 T. Dijon mustard
1 1/2 cups chopped scallions
1/2 tsp. garlic powder
1/2 tsp. garlic pepper
In 4-qt. slow cooker, combine the potatoes with the bell peppers and ham. Stir to mix well.
In a 1-qt. glass measure, blend the cream cheese and milk. Heat in microwave on high power 1 to 2 min., or till smooth when whisked together.
Stir in the mustard, 1 cup of the scallions, the garlic powder and pepper till blended. Pour this cream cheese mixture over the potatoes and ham – do not mix.
Cover and cook on low setting 5-6 hours, or till the potatoes are tender. Stir gently. Sprinkle the remaining 1/2 cup scallions over the top and serve.
*Not because of food snobbishness, just had potatoes beginning to sprout!
