What's on the menu for today??
One dish I'm making for the freezer is Hawaiian Beef Cubes ( but with pork instead) in the slow cooker. I love little pkgs. of this to grab for last minute dishes.
We'll probably have pork steaks, grilled with some grilled fries and onions also. Lettuce is going crazy, so probably a salad.

We're going to have pulled pork sandwiches, coleslaw and probably a few tots.
Jean, I know that you are going to enjoy having nice fresh salads with your lettuce, but have you tried it sauteed? A Chinese friend told me to try it and I was pleasantly surprised. They like to finish it with a spoonful of oyster sauce.
We had a 1 lb. container of organic mixed greens that wasn't getting used up fast enough. So, I sauteed it in a little garlic oil and sprinkled with a little salt. It was a lot like eating spinach. Who knew???

Huh! I did the grilled romaine thing a couple years ago when we all tried it and I have cooked lettuce with peas a hundred years ago - but, I have not sautéed it......sounds like it should be done1 Thanks for the idea.

Hmmm, I portioned salmon for freezing this morning and there were an extra 6 ounces left, so we had salmon, spinach, and avocado salads for lunch. I'd like to think that this would "do" us for the rest of the day, but I know better.
Bought some nice-looking asparagus this morning, so maybe an asparagus and chicken stir-fry.
