I'm making the Ratatouille Chicken Thighs tonight and was going to make the soft polenta. I realized, I'm not CRAZY about the polenta tonight, so I looked at the alternative suggestion...Spinach Feta Orzo. I thought I had everything, but realized OS had hauled off my orzo. My question is...do you think this recipe would work with rice...with adjusted cooking times of course? Here's the recipe:

Spinach Feta Orzo

1 tablespoon olive oil
1 teaspoon garlic -- minced
1 pinch red pepper flakes
1 cup orzo -- dry
1 1/2 cups chicken broth
1/2 cup dry white wine
2 cups fresh spinach -- shredded
1/4 cup feta cheese -- crumbled
salt and pepper -- to taste
Saute garlic and pepper flakes in a large saucepan for 30 seconds over medium heat. Add orzo, stirring 2 minutes to coate with oil and prevent sticking.
Sitr in chicken broth and wine. Cover, reduce heat, and cook 10 minutes.
Add spinach and feta to hot pasta to wilt the spinach, then season with salt.
