Well, I am going to practice for my joint business venture with you and Maryann and make those chili dogs from the grilling book. I have seen corn on the cob in stores so I may make that too.

On another note, I have a bunch of spinach I need to use this week, and I don't much care for it raw. Any recipe suggestions using spinach anyone?

Which hot dog are you making??? Maybe I'll go that route also.

Theresa, I love this couscous dish with spinach - if I have fresh, I just steam it a little.

Couscous, Spinach and Dried Cranberries

Recipe By :a Chef's Journey

1 1/4 C Chicken Broth
1/4 Tsp Ground Red Pepper (cayenne)
1 C Couscous
10 Ozs Frozen Chopped Spinach, Thawed, Squeezed Dry
1/2 C Dried Cranberries
1 T. Olive Oil
1 T. Seasoned Rice Vinegar
1/4 Tsp Salt

Heat broth & cayenne to boil over high heat; pour in the couscous.
cover ad let stand untill liquid has been absorbed, 5 minutes.
Gently fluff up with a fork and add the spinach, cranberries, oil, vinegar and salt. Combine.

Thanks Jean, that sounds perfect to make with grilled salmon tomorrow night! "if I have Feta, I like to crumble some over the top." haha, like my refrigerator is ever out of feta! I would sooner run out of toilet paper I think.

I am making the chili dogs on pages 8-9 of the Cuisine Tonight Grilling book. On that note, I have done a little research and learned that there is a Hot Dog University in Wisconsin. I think I would be so good at running a hot dog shop, I love them so and enjoy talking to people.

Must be sandwich day. I am making paninis using purchased Asiago Focaccia with sliced pastrami, Jarlsberg Lite cheese and onions caramelized with Calvados and fresh thyme and of course Dijon. Never made it before, but needed to cook some onions that were going to go bad as well as use the cheese and the pastrami. Hopefully it will taste as I envision. We'll have it a simple green salad and lovely fresh fruit for dessert (strawberries, mangoes and cherries and maybe pineapple if ready).

Here's the recipe I used last night. They were tasty! I have no idea what we'll have for dinner tonight. I'm browsing the forums trying to get inspired.

Chili Dogs with Onion Slaw


Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
4 natural casing hotdogs - Nathan's Famous Beef
4 unsliced hot dog buns
Saucy Beef Chili:
1 pound ground beef
1/2 cup onion , chopped fine
1 Tbsp garlic cloves , minced
2 Tbsp tomato paste
2 Tbsp chili powder
1 tbsp prepared mustard
1/4 tsp cayenne pepper
1 1/2 cup Beef Broth or Water
Onion Slaw:
1/2 cup mayonnaise
1/2 cup chopped fresh parsley
1/4 cup Creole mustard
2 tbsp sugar
2 tbsp distilled white vinegar
1/2 tsp red pepper flakes
2 1/2 cup green cabbage, grated
1/2 cup onion grated

1. For Saucy Beef Chili:

2. Saute beef in a large saute pan over medium-high heat until cooked
through. Drain off fat. Add onion and garlic and cook 1 to 2 minutes.

3. Stir in tomato paste, chili powder, mustard and cayenne and cook one
minute more. Add broth, bring to a boil, then reduce heat and simmer until
liquid evaporates, about 10 minutes. Season to taste with salt.

4. For Onion Slaw:

5. Whisk mayonaise, parsley, mustard, sugar, vinegar and pepper flakes
together in a large bowl. add cabbage and onion and season with salt. Toss
to coat. Chill until ready to serve.

6. To assemble Chili Dogs:

7. Preheat grill to medium high. While grill heats, slice buns lengthwise
through the top. Grill hotdogs until heated through and lightly charred.
Toast buns lightly.

8. Serve hotdogs in buns with chili, slaw, and grated cheddar cheese.

That chili recipe is very similar to the one I use. We love it! I know this will sound strange to some of you, but sometimes we put chili on our hamburgers!

I've tried Nathan's hot dogs, but they were so strange...taste and ESPECIALLY the texture. I was so disappointed to learn this. After years of being envious of people being able to have those famous dogs, they FINALLY got them in stores around here. What a letdown!

Tonight, we're having BBQ ribs, corn on the cob, and steamed cabbage. I need to go put my chicken in the fridge to thaw for tomorrow night and check the recipe for that Chicken in Red Wine Vinegar.
