Well I loved your recipe and wanted to make that. However, it ended up to be an inspiration for an entirely different meal. My vegan child (VC) was here so I made the grilled Tofu and marinated it in soy sauce, ginger, garlic and oil. Hubby grilled it on the George Forman (GF) and I made a peanut butter Thai Noodle to go with it along with a fresh spring roll.

I know it is not your recipe, but still the inspiration was all yours dear.

Wow, your meal sounds great! Glad to have provided the inspiration but, in turn, I'm going to use your menu one day soon.
Did you make the fresh spring rolls? Those wrappers bedevil me...

Yes we did make fresh spring rolls, however they originally were meant to be fried and they burst open and stuck to each other. it was quite the caper. I decided to serve what I had the 'fresh' way and they were still wonderful.
