As I mentioned in the dinner thread, we stopped at the casino on the way home for a quick dinner. Was surprised at the new items they had on the lunch menu they are trying out to see how they go over.

Three of them are things I'm going to have to play with, so I stole (with permission ) the menu to work on.

- Double Dare Burger Dip: "Our 1/2 lb. Angus burger topped with melted pepper jack cheese, sliced jalapeno & pico do gallo on an Alpine roll with Bloody Mary au jus for dipping."

Roy had this one and it was a regular beef au jus with bloody mary mix added. I'm thinking the one Bill & Jane make would be better in the 'jus' than the one we make. But, will try both. He loved it. And it was tasty.

- Taco Salad Wrap: Ground beef, black olives, shredded Cheddar cheese, diced tomatoes, red onion, crisp Frito chips - all tossed in a French dressing in an garlic-herb wrap."

In other words, a Taco salad in a wrap - it was delicious! And the corn chips (just a few) added such a surprise crunch! It was served warm, but not hot enough for the cheese to melt - just perfect.

This one, I really wanted to order just to see how it was put together, but will have to wait for another visit....

- Memphis Sweet Potato Nachos: "We start with crisp sweet potato waffle fries, add a generous layer of slow roasted pulled pork, bourbon barbecue sauce, Monterey Jack cheese, finished with diced fresh tomatoes & slices of jalapenos."

Oh, there was one more that sounded fun - "crab stuffed butterflied shrimp, wrapped in bacon - deep fried and topped with Hollandaise sauce........."

I'll probably gain 20 lbs. if I play with all of these.

MMMMMMMMmmmmmmmmmmmmmmmm! Those sound like fun projects. Those sweet potato nachos sound incredible. Fun!

They all sound delicious, and I'm sure you could moderate the caloric count to make it lower than it is at the restaurant.

Oh boy, do these sound good! They all sound good, but William would love the Double Dare Burger. I may have to play with that one next time we have burgers. I agree that Bill and Jane's Bloody Bulls would be awesome as the dipping sauce.

And those shrimp....AHHHH!

Jean, I had a thought. When I first read this, the "Memphis Sweet Potato Nachos" sent off bells in my head. This may be old news, but I thought I'd mention it. Years ago, my Dad was very big in the Masonic organization and would go to the national conventions (?). This was a huge foodie event, as the Masons/Shriners have food booths at every event I've ever been too, in addition to fund raising BBQs, Fish Fries, BBQ (and Fried) Chicken events several times a year.

ANYWAY, he came home one year really excited about a new dish he had discovered. I thought it was weird at the time, but after your post, it doesn't seem so weird any more. He wanted to play with the idea of stuffed baked potatoes. The stuffing included BBQ pork. He thought stuffing a sweet potato would be interesting. Alzheimers set in soon after, and he never pursued the idea. Now I can't help but wonder if he wasn't on to something. When I think of BBQ Pork, baked potato doesn't come to mind, but SWEET potatoes do!

Just something to think about.

I'm planning on playing with this as soon as we get to our new spot. I think I'll loose the tomatoes, maybe a tomatillo salsa and a prickly pear something or other. I have everything but the pork. But maybe I'll use some smoked duck. Mmmmmmmmmmmmm.

Good idea Daphne - I feel like I haven't really cooked for a month and I'm going to have to go back over a month's postings to see what I wanted to play with. Thanks for bringing this one back up. It's copied now.

Stuffed Sweet Potato - that is one 'duh' moment!! What great flavors this will be. Even some doctored up ham (that I have in the freezer) might be tasty! Duck, too!
