Warm Cabbage - Beet Salad

Here is the recipe for the Salad - I really enjoyed this one.

2 Cups white shredded cabbage fine shredd
4 Whole medium beets or Small (baked) * big dice/or chopped
1 Granny Smith apple diced

2 Tbsp Dijon Mustard or a whole Grain Mustard
Salt and Pepper
1 / 4 cup Champagne Vinegar or a good (Red Wine Vinegar)
1 Tbsp Honey
!/2 Cup Walnut Oil
1/2 Cup Walnuts

Mix cabbage - apple - and hot beets(peel while hot and cut up) in a bowl, meanwhile warm in a small pot
Dijon, Honey, Vinegar, Salt and Pepper on low heat until it is hot but not boiling, Add Walnut Oil to Finish Vinaigrette. Pour Vinaigrette on the Salad and serve warm , Garnish with walnuts if you like

*Bake Beets in 400 oven for 1 hour. - Bake in Aluminum Foil - I usually
wash beets well - use olive Oil and Salt and Pepper
Everything will be all right in the end. So if it is not right, then it's not yet the end.

This sounds like a perfect excuse to eat more cabbage, more beets, and more apples.
You only live once . . . but if you do it right once should be enough!
