Just found THIS Saveur page about making your own condiments. It doesn't mention the recipes right on the original page, but is a slide show with a whole lot of condiments. Each condiment's picture has a link to its Saveur recipe.
The recipes look like good ones, too, such as ketchup made from FRESH tomatoes - not canned and without added tomato paste; also Worcestershire sauce with tamarind and anchovy. Lots of good stuff!
