This wouldn't be for me, but sounds like something this group would enjoy. I translated it from a Spanish-language site, but it's not a complicated or particularly exact recipe (and didn't specify the sizes of the cans).

Artichoke and Cod Salad

Ingredients:
  • 1 Can Artichoke hearts
  • 1 Can Piquillo peppers (or pimentos - In the first photo on the page, it looks like a whole pimento and not small enough to be a piquillo)
  • A little salt cod, desalted (i.e. soaked in several changes of water to remove most of the saltiness)
  • Dressing to taste (vinegar and salt are suggested)
Instructions:
  1. Drain the artichokes, peppers and cod well.
  2. Roughly chop everything into more-or-less regular chunks.
  3. Toss everything together with whatever dressing you wish. The original poster prefers vinegar and salt, but says any other dressing and/or seasoning would be fine.
  4. If you wish, you may also add other elements, such as imitation crab or some onion.
If blueberry muffins have blueberries in them, what do vegan muffins have?

Although I love baccala, I've never worked with it myself. Sounds interesting, but not a combination that I would try.

Bacalao is surprisingly good once desalted.

Have only ever heard of Lutefisk - never seen nor tried it,

This is funny, especially after our discussion of lutefisk last weekend.

Sorry Labs, as much as I love all the ingredients (unsure about the salt cod) this just doesn't grab me
You only live once . . . but if you do it right once should be enough!
