I thought you might enjoy this or get an idea for your own version. I was food gawking and found this

Then I decided to put the omelet on a tortilla,fold in half, dip it in egg, and cook it on the paninni griddle. It was very tasty (we spiced ours and served with lime/ketchup dip)
