I had a cup of heavy cream left from something and I don't want to make anything that calls for a cup of heavy cream right now, so...what to do. I remember my old friend, Chef June Jacobs, talking about making butter out of heavy cream a long time ago.

1 cup heavy cream
2 large garlic cloves
pinch of sea salt

Put the garlic cloves in a food processor and whirl to mince, add the heavy cream and salt and whip like crazy. About 1 1/2 minutes later, I had the most wonderful flavored garlic butter.

I just can't count the dibs and dabs of heavy cream I've thrown away over the years...

Great idea, Jean! If you want a sweet one, add a bit of sugar and cocoa powder to it, it is fabulous on toast. (don't ask how I know!).
Practice safe lunch. Use a condiment.

It also works with a mixer - especially by overwhipping whipped cream in a stand mixer. LOL!
If blueberry muffins have blueberries in them, what do vegan muffins have?

Joan has an old fashioned butter churn, Lee used to love to make butter. I'll keep this in mind - the local grocery has heavy cream at 2.69 a quart! I just might have to do this!

Can you freeze the heavy cream to accumulate enough prior to churning it?
