Re: (...)
I have a former student that I have mentored for the past two years. She's a great kid and has come a long way....from failing grades to Jr. Beta Club member. From fussing out teachers and getting in fights, to head cheerleader and teachers' favorite. It has been a rewarding process.
I'm asking for your help with her diet. She's desperate to gain weight. She's got a very high metabolism and very active. In addition to cheering, she is a fierce softball player and is very active. She'd rather be outside playing, walking or running than watching tv. Her recent favorite inside pass time is the WII game, Just Dance.
She obviously can't control her meals so much, but I was hoping you guys could suggest some snacks that would help her put on some pounds. She is ready and willing to cook. Her only food allergy is to walnuts.
So, what do you think? Any ideas?

How is her protein intake? Those fortified protein drinks are great for caloric intake as well as adding protein to her diet if she is very active.
Also carbs, pastas and breads. The only thing I would advise is to be diligent with portion control now, so when she is not as active she can cut back the portion size to keep her from gaining too much weight.
WTG and Kudo's to you Daphne for taking such a heart felt interest in this girl. You quite possibly saved her life

Thanks, Denise. She's a great kid. She has become more like my own than just a student. I'll pass on the advice. I'm thinking her protein is low. I'll definitely pass that idea on to her.

Like Denise, I was going to suggest those drinks (like Ensure ?) which would be so easy to work into her schedule.
I do remember she should concentrate on 5 or 6 smaller meals a day rather than trying to work everything into a 3 meal a day.
Here's a link to some information that I think would really help her. And, you are a wonderful teacher and there are some young kids that will be the poorer for not getting into your classes before you retire!!! That's for sure.

I agree with Denise! Good for you, Daphne, and I'm so happy that you have seen great progress in light of recent events in your classroom.
Gaining weight is an ongoing issue for Alyssa. Heather takes her to a feeding specialist. One of the most important meals of the day involves drinking a can of prescription strength Boost. If the girls parents have medical insurance and a prescription plan, her family doctor can write her a script.
Unfortunately, without the help of a nutritionist, the young lady you are helping might develop some very bad habits that could backfire on her later on. This happened to my daughter's college roommate. She barely weighed 100 lbs. going into college. Ten years later, she is very overweight and can't get it under control.

Thanks, you guys! You're awesome!
I have another question. She LOVES those energy drinks that are so popular....Monsters? I fuss at her all the time about them. But if you guys could back me up that they are working against her desire to gain weight, I'd be very grateful.. Isn't the excess caffeine a bad thing when trying to gain weight?

Everything Denise et. al have said.
Those
d@mn energy drinks should be outlawed. They're loaded with caffeine and sugar. Better she should drink lots of water and cut out the "energy" drinks and soda. I've got a major addiction to canned seltzer water - carbonated water with no sugar, caffeine, salt, or artificial junk.
Ensure is great, whey protein drinks are good. I'm betting she needs more protein, more high quality carbs (whole grains & veggies, potatoes!, fruit). Hummus would be good. Lots of smaller meals - yes!
You only live once . . . but if you do it right once should be enough!

I agree about the energy drinks! I don't know why they're still on the market!

When I worked at the restaurant, my immediate supervisor would drink a total of THREE Red Bulls during his shift. YIKES!
