Saturday's dinner.

Taco Bar
Roast Pork (carnitas or cochinita pibil style) house roasted and pulled
Chicken (achiote marinated or mole) house roasted and pulled
Pinto pot beans - house made
Shredded lettuce
Pickled red onions - house made
Curtido (pickled cabbage) - house made
Jalapenos & radishes
Cheese (cheddar, Jack, cotija)
Guacamole - prepared
Limes
Tortillas
Salsa (verde & fire roasted tomato) - house made
Sour Cream

Did I mention that this is a birthday party for 60 (all Mexican) people! Now I just have to keep Chad on target here - no ground beef, no "crispy" tacos, and ALL of the goodies! Rick Bayless and Diana Kennedy are my guides for this - and that funny sense that I'm 3/4 Mexican although no one in the family but me has ever been to Mexico.

Grocery shopping Thursday, make the Curtido (speedy method), marinate the pork and chicken Thursday night. Friday cook the pork and chicken, and the beans. While they cook we'll do the rest of the prep and get everything in the walk-in. Did I mention this is Chad, Bob, and I???

Please cross you fingers for me.
