What's on the menu for today??

Leftovers here - the Cashew Chicken was supposed to feed 2 or 3 with rice and Nigella's Noodle Soup for Needy People was to serve 2, but we ended up with lots of leftovers!!

Maryann, that soup is delicious, it will certainly become a staple around here!

I can't believe I'm going to say this, but I think some tofu added to this soup would be good, also.

Issue 67 was the first issue on the top of my stack, the magazine magically opened to page 14 so it must be a sign. Coconut Pork Cutlets and Brazilian Style Black Beans and Rice. Only I'm subbing chicken since I bought 18 boneless breasts at the big Foster Farms 50% off sale yesterday (and I had 3 $1.00 of coupons). We're practically eating for free. LOL.

Just need to find shredded unsweetened coconut but I'm pretty sure our Sprouts market carries it.

Has anyone made these particular recipes before?

Thanks for bumping the reviews! I have to say I took a double take at the nutritional values. As a matter of fact, I don't believe them. I don't see how half of a boneless pork chop coated in half panko/half coconut could have over 1000 calories.

Obviously the serving of rice adds to the grand total but still! I'll use light coconut milk. That'll shave a whole 30 calories or so. LOL.

Definitely looking forward to this.

Jean, I'm so glad you liked that soup as much as we did. I made it again today for lunch with my dad. I think it could easily be varied a little bit for variety. Tommy didn't like the looks of it and wanted ramen noodles instead.

Dinner tonight will be another kid friendly meal, sloppy joes and tater tots and cooked glazed carrots.

My energy level on Thursdays is always sapped, so I did country fried steak with mashers and peas. I can't wait for pay day. I'm going to plan a bunch of meals and go shopping at Sam's. I did better when I did that. I am determined to get back into cooking. I'm SICK of my boring meals!
