Re: (...)
William's employee's mother was diabetic. I failed to find him a dessert for her before she died. He has requested a dessert again for some diabetic friends. So I have come to you guys for help. I don't want to fail him again. Suggestions?

I have a cookbook for that because I had gestational diabetes. What flavors/type are you looking for?

Well, he loves that chocolate cake recipe that Jean posted a while back...Double theYum Cake. It's a thin sheet cake topped with peanut butter right out of the oven with a dark chocolate ganache when it cools.
He also loves cheesecake and carrot cake.

I'll look and see if I can find what I used to make on the Island - we had so many diabetic friends.
I'll bet a "Billy search" for desserts would garner some nuggets of joy.

Diabetics must avoid sugar spikes and control the long release sugars you get in carbs. Here is a blog link to a flourless chocolate cake done with splenda
