A repeat (from Jan 2011), but one I hadn't seen.

Everyone thought the bananas with the ham would be strange, but it was no surprise to me, especially with that recipe, from one of my mom's older cookbooks, that I posted about three years ago:

Sausages Baked in Bananas
Serves 8

Ingredients:
  • 8 bananas, unpeeled
  • 8 to 16 link sausages
Instructions:
  1. Slit each banana lengthwise from tip to tip to form a pocket, being careful not to cut through the skin on the under side.
  2. Place 1 or 2 link sausages in the opening of each banana.
  3. Arrange bananas in baking dish, slit side up and bake in moderate oven (375F) about 15 to 20 minutes.
  4. To brown sausages, place under broiler 2 or 3 minutes after baking, or fry until light brown before inserting into bananas for baking.
Those are absolutely delicious and adding Gruyère wouldn't exactly hurt! Maybe Chef Cantrel's grandmother had the same cookbook my mother has. LOL!
If blueberry muffins have blueberries in them, what do vegan muffins have?
