I'd like to pick everyone's brain for a minute. I have some leftover black bean and corn salsa from hors yesterday and I woke up in the middle of the night thinking what I could do with it. Other than adding it to a Mexican-style soup, it drove me crazy.
I wonder if Cis's 'smooshing' method might work. Puree the whole thing and add some liquid (V-8 juice, tomato puree, ?????) and made a sauce for something.....What do you all think?
It has all the usual -
black beans & corn
cilantro
Serrano
garlic
onion - dry and green
chili powder
grd. cumin
touch sugar
salt

Cook it together with some refried beans, seasoned ground beef and some Monterey Jack cheese for an awesome bean dip.

If I had leftover pork, I'd make tacos. I think it would be great with eggs, for breakfast burritos.

Leftover rice (cold) & leftover salsa, some shredded cheese . . .voila = salad!
You only live once . . . but if you do it right once should be enough!

Southwestern Sloppy Joes. I think the recipe is in the sandwich book. I made it once (but with ground beef versus ground turkey) and Tony loved it.
