Re: (...)
What's on the menu for today?
We're still on the road, but at a motel in Bend with internet whatever.
On our way home shortly and will probably stop at the casino for dinner.
Since we have seen so little tv lately, will have to stay away from the thread about the Food Network star. Hope it doesn't fade away before we see the show.

Are going to stop at that Lucky Dog Casino? That's where I stopped for lunch on my way to Camas, WA from your house. Even tried my luck at the slots, and lost. Slots are more like video games now. Not really much fun if you ask me.
Anyway, Maggie made your Burrito Chicken Crockpot meal yesterday. Not exactly health food, but boy was that ever good. I passed the recipe on to my dad.
The kids are off to daycamp again today. This is their last week. Then back to the regular schedule. I am still trying to think of what to have for dinner tonight.
Perhaps some BLTs not sure, but something easy.

I'm hoping to make the Boubon Chicken today. I have a meeting and a little more tomato stuff to do, but I think this is doable.

My husband won't be home and due to some termite maintenance we aren't supposed to be putting on the A/C after the man is gone so I think I'm just going to heat up some Trader Joe's mac and cheese in the micro (and only eat a small portion as I'm still on damage control) with a fruit salad so I don't have to turn on the oven. Michael has leftover pasta from last night. We shall survive the no A/C, frozen dinner and leftovers.

You sure get my sympathy, Trixxee. I sometimes wonder how we ever managed without a/c "back in the day." I would probably be sleeping in your RV.
We have a small amount of l/o chicken and a couple of ribs, so I'll probably just bake some potatoes and make a chopped salad. Dessert is marble cake, made by Katie!

I just wanted to add that I made Zucchini-Parmesan Soup this afternoon to have a little something to add to dinner tonight. I believe it's a Cuisine recipe, but for some reason, I have no record of what issue it's from, so it may have been an email recipe. Anyway, it is just delicious, so if anyone has an overload of zukes, you might want to try this!

We love that recipe and it was from the Soup and Stews book from

I seem to be on a shrimp binge this week, tonight it's shrimp parmesan with a side of asparagus.
