Somehow I have a recipe for a salad with no title on it, so I can't go looking for it. It is wonderful - made it just now for our late 'snack'

these are the ingrdients -
(I don't feel like typing it all up right now...)
barley, couscous, brown rice, corn, chickpeas, green peas and green onions

the dressing (which is outstanding) -
olive oil, basil, chives, white balsamic, sugar, black pepper and salt.

I had some couscous cooked up, so I went ahead and used just the couscous without the other grains. But, it really is a nice summer salad with all the herb flavors.

Anyone recognize it? I did a search on the internet for "barley, couscous, brown rice" hoping something would come up, but the iternet said it was too busy at the moment.

finally able to do a search on the internet, but did not come up - but a similar sounding with the addition of pine nuts....oh yeah!

Here's the recipe - I can't remember Maryann developing this, but maybe I have some notes somewhere. Sure is tasty.

No-Name Grainy Herb Summer Salad
1 cup each: cooked – Barley, Couscous, Brown rice
1 cup corn
1 cup chickpeas, drained and rinsed
1 cup green peas
1/4 cup sliced green onions, white and green parts
DRESSING:
1/3 cup extra-virgin olive oil
1/3 cup fresh basil, rough chopped
3 tablespoons fresh chives, rough chopped
1 1/2 tablespoon white balsamic vinegar
1 tablespoon water
1/4 teaspoon sugar
1/4 teaspoon freshly ground black pepper
Salt to taste

Combine the barley, couscous, rice, corn, chickpeas, peas and green onions in a medium bowl and set aside.

Pulse the oil, basil, chives, vinegar, water, sugar and pepper in a processor or blender until the herbs are just finely chopped. Taste for seasoning and add salt and more pepper if needed. Toss with the grains and veggies to coat well and serve. 8 servings.
