I had the honor of prepping lunch for President Clinton and his staff. Chef's choice, I had so much fun! For staff, I made turkey with chipoltle lime mayo, caramalized onion, roasted red pepper and melted muenster cheese on rosemary and OO foccacia. Bill Clinton is now a vegan so he's a challenge. Decided on quinoa salad with grilled local corn, grilled red, yellow and green pepper, grilled asparagus, local tri color tomatoes with an herb and lemon vin.
So far, feedback is positive. PJ
