For anyone who is interested in an easy dessert and very tasty if I do say so my own self.

Apple-Cheddar Crisp
a Chef's Journey recipe

Toss together & set aside:
1 1/4 lbs (about 3 medium) apples, peeled & sliced
1/3 c granulated sugar
1 T. lemon juice
Little pinch of salt
------
1/4 c. toasted chopped pecans
1/2 c shredded white cheddar cheese
----------
Topping - butter, flour, sugar, cinnamon in a food processor & mix:
4 oz (1/2 cup) softened butter
1/2 c all-purpose flour
1/2 c packed brown sugar
1/8 tsp cinnamon

Then add the oats & process till just mixed:
3/4 c rolled oats

Preheat oven to 350°F. Butter or oil an 8X8-inch baking dish; spread the apple mixture over the bottom.

Sprinkle cheese then nuts over the apples. Crumble the topping evenly over the crisp.

Bake 25 to 30 minutes until apples are tender and topping is browning. Makes about 8 servings

This does look really good. I have never had a crisp with cheese, but I remember people eating apple pie with cheddar cheese years ago. Seems like nobody does that anymore.

I like the pecans too! Wish I had a bite right now!

What kinds of apples do you use?

Granny Smith - they hold up under baking and I like that they aren't sweet.

We love it side by side as a snack, but I've never had it melted together as in a crisp. I'm going to bake an individual one by itself first to see if my own Mr.Picky likes it that way.

I'm with Daphne: although cheese on apples doesn't repulse me (in fact, I LIKE cheese with many fresh fruits), the use of it on or in cooked desserts has never particularly impressed me.
If blueberry muffins have blueberries in them, what do vegan muffins have?

Give it a try, Maryann - it's almost like a mystery ingredient. I can't say how many folks over the weekend after looking at the recipe said - oh, that's what that flavor was. It is very subtle and using white cheddar it doesn't stand out like a sore thumb.
